What I Ate This Week

I try to cook fresh food every day, and here are a few from this week. I love searching the web for dinner ideas, so I hope this may help someone else as well as keeping track of dishes I’ve made.

Bacon wrapped turkey tenderloin with roasted red potatoes and green beans with garlic. Sprinkle the turkey with salt, pepper, thyme or any other herbs you like. I cut the bacon in half and put two half strips across each tenderloin. At halfway through baking (I just followed the package instructions), I added some white wine to the pan to deglaze it and basted the turkey with the juices. It ended up very tender and moist, with a nice smokey flavor from the bacon.

Pancakes made with banana and almond milk, topped with strawberries. I had frozen whole strawberries which I microwaved with some strawberry jam.

Chicken and vegetable noodle soup with onion, mushrooms, celery, carrot, red pepper, corn and cannelini beans.

Puff pastry filled with cream cheese and strawberry jam.

I also made a savory version of the puff pastry with cream cheese, bacon and sauteed kale, which turned out really yummy. Even my picky eating child who does not like bacon or kale liked it.
